Rodeo Set to Begin in Clovis

During rodeo weekend in Clovis, about 35,000 people will come through the gates and almost all of them will eat a tri tip sandwich.  More than 7,000 pounds is devoured over the four-day weekend.  It's all cooked to perfection.


"[We] cook it at a nice temperature.   We don't burn the meat.  We pull it off about medium, medium-rare, and let it simmer in the pan.  Then slice it up, add a little juice on there, it's great," said George Barrera, who cooks the tri tip.


Sandwich sales are around $12,000 per night.  Thursday is Professional Bull Riding.  About 60 bulls are bucking, three times the work for bull fighter Tim O'Connor.


"We look down the sheets and see what's out for the evening and who's got them, what the match ups are.  We keep a record of the bulls a little bit so we know, is one a little meaner?" said O'Connor.


As for the athletes competing this weekend, they stand to win $35,000 in prize money.  But some peoples' favorite event, Mutton Bustin, carries a cash prize of zero.
